Still Lovin the Mac

Well... lets just say its been awhile. I had the best intentions for this blog, but life sometimes has a way of laughing at your intentions. Although my last post was ages ago, I've still been living the Mac & Cheese lifestyle each day. Recently, I came across some interesting Mac & Cheese recipes that I wanted to test out and share the results so without further ado I give you you:

This recipe appeared to have everything that I love about food. It was fried and it had cheese. I feel pretty comfortable with most kinds of cheese, but a pimento cheese spread is not in my vocabulary. Wikipedia informed me that this a common food found in the Southern United States which does not include Arizona so I made some slight substitutions using Velveeta, sharp cheddar, an Italian cheese mix, and a mexican cheese blend for all the cheeses in the mac.


The directions state that you should let the mac and cheese set for about 4 hours in the fridge before you shape it into balls but I found it was ready to go after about 30 minutes. Using an ice cream scoop I shaped the mac & cheese into balls on a cookie sheet.


After that I set the cookie sheet in the freezer for two hours just like the recipe stated. I'm not sure why this has to be done for so long, but I'm sure there is some kind of science behind it. Once the two hours were up I coated the mac and cheese with the egg wash and bread crumb mixture. Then it was time for my favorite part ..... The Fryer!


This is my little fryer which I bought for my boyfriend as a gift because he loves to fry things. I then proceeded to commandeer it and now I use it quite frequently. It definitely comes in handy when you want to make french fries without starting a fire (that my friends will be another story). When frying up the mac & cheese I found that six minutes was the perfect time to get the crust nice and crispy without the middle being frozen.

The result is a ball of deliciousness that brings together the comfort of mac & cheese with the awesomeness of a mozzarella stick. Add a little bit of marina sauce, a nice cocktail, and you are good to go! Until next time ... enjoy the mac!

Denny's & 20 Questions: Day 1 of the Cali Trip

After many changes and car switheroos we finally started our trek to California.

We made it as far as Barstow and have stopped for the night. Unfortunately Barstow does not have much to offer as far as food goes but we somehow we managed to still get in arguement about where to eat. Brandon wanted Bob's Big Boy because they have a "great brownie sundae" but everything else is terrible and I voted for anything other than Bob's Big Boy. Brandon had AJ on his side which made my mom the deciding vote. Mom chose Denny's so that's where we went.

The food was actually pretty good and Brandon, AJ, and I filled up on some kind of chicken tenders while AJ insisted on playing 20 questions. Things were going pretty well until my
mom made the fatal mistake of saying we could get dessert. And that's when the fun really began....

AJ wanted the Oreo Sundae, I chose the Caramel Apple Crisp, but Brandon made up his mind that he wanted not one but two desserts and gosh darn it he was justified in getting them because my mom turned him down on Bob's Big Boy.

My mom either didn't hear him or didn't believe that he would actually get two desserts but sure enough our waitress returned with mine and AJ's desserts and Brandon's strawberry milkshake and brownie sundae (hey he couldn't get the one at Bob's Big Boy so he had to make due). As he started the job of devouring his desserts he decided to switch up 20 questions a little bit and make us guess musicians (much to AJ's dismay). Brandon being the expert on all things music thought he would have this one in the bag but my mom gave him a run for his money. After a rough start (I completely messed up on giving clues about Eric Clapton which I am sure I won't live down) I came out victorious guessing almost all of Brandon's musicians!!!!! Hooray!!!

We spent close to two hours playing 20 questions musician style so needless to say tomorrow should be quite the interesting day especially since we get to go to LITTLE JOCKO'S!!!!

Countdown to Cali

T-1 day until we leave for California to visit family and, as my brother and I are constantly reminding my mom, to eat at Broadway Bagel at least five times in the four days we are going to be there.

It's always nice to see my family, but one of the things I really look forward to is eating some pretty amazing food most of which we had to leave behind when we moved to Vegas (my mom is a great cook and has kept us full and happy since we have been here). I get excited about eating at Broadway Bagel, Little Jocko's, or my Nana's awesome baked Mac & Cheese!

So with one day left I need to really figure out if I want the cheeseburger and chocolate milkshake or the fried burrito and chili dog at Little Jocko's!
